Grown Up Grilled Cheese

 I made some sandwich bread a few days ago and made the gang these grilled cheese sandwiches.

 Spread the bread with a bit of dijon mustard.  Top with some good smokey ham, thinly sliced pears, fresh spinach and thinly sliced sharp cheddar.

 I used Double Gloucester.  The key to these is a good sharp cheddar.  Grill in a cast iron pan over medium heat until the bread is browned and the cheese has melted.

Grown up grilled grilled cheese just sounded wrong!
