A Tornado is Coming, Let's Eat Spaghetti

The skies began to look formidable.


You could feel it in the air. The birds became silent. The weather channel was lit up in yellows, reds and even scarier....purples!

Teddy paced the floor.


Phewww....it just missed us but the storms that followed were nasty.


The day looked pretty much like this, so I made spaghetti. What else was there to do? I had been wanting to try a new recipe and I am very glad I did. This is my new favorite recipe. At least until I find the next one.


First you make the meatballs. And oh my....if these are not the best meatballs in the entire world I do not know what is!

2 1/2 # ground beef
3 eggs
1/3 cup instant cream of wheat (dry)
3/4 shredded cheese (mozzarella, provolone, etc. I used asiago )
2 tsp. lemon juice
3 garlic cloves minced fine
1 tsp. oregano
2 T. Italian spice mix
salt & pepper to taste

Mix this all together and allow to sit refrigerated for at least 30 minutes to blend flavors. Form into 1 inch balls and place on a greased cookies sheet and bake at 400 degrees for about 20 minutes. Try one to see if it's done. Then eat about ten of them because no one will notice. This recipe makes about 70 meatballs.




While the meatballs are baking melt a stick of butter in a heavy saucepan and add 1 large chopped onion. Sprinkle this with several T. of onion powder and saute just until softened. Add 3 large cans of crushed tomatoes. Stir to combine then add all of the meatballs with their juices. Stir to blend.


Cook 2 # linguine in salted water, drain and return to the pan and mix with 4 T. butter to coat noodles. It sounds like lots of butter but it is a large recipe.


Mix the sauce and meatballs and toss to coat. Mangia! My daughter and her boyfriend fought over the last meatball. That says a lot because he is an extremely picky eater and she hates ground beef.
