Cranberry Kringles Recipe

This is one of my kids favorite Christmas cookies. Cranberry Kringles.


Put 1 1/2 cup butter in the bowl of your mixer.


Add 2 cups of white sugar and grate 2 tablespoons of orange peel into the mix. Beat this until creamy.


Add 2 Tablespoons of vanilla extract. I use vanilla bean paste.  Add 1 egg.


Beat this until creamy.


Add 1 teaspoon of baking powder.


Add 1/4 teaspoon of salt.


Put the paddle attachment on your mixer and beat in 3 1/4 cup flour.


Add 2 cups of dried cranberries.



Add 2 cups of shredded coconut.


The dough will look a bit shaggy.


Scoop them into small balls ...about 2 tablespoons.


Bake at 350 degrees for about 15 minutes. They should just be slightly browning on the edge. Do not overcook.


I doubled this recipe and it made about 85 cookies.


This is a very chewy cookie.


The tree is up.


Dec. 5th on the advent house.


The lights are on the tree and I am decorating it today. Right now I am baking the mincemeat tarts which I will show soon.
