Potlatch Copper River Salmon on a Cedar Plank

Potlatch is one of my favorite ways of cooking. It is absolutely my favorite way to prepare salmon.  It is done on a cedar plank and is seasoned with Potlatch seasoning which is a combination of salt, paprika, crushed red pepper, chili powder, oregano, basil and coriander.

Copper River Salmon season is just about over here.  We eat it often when it is in season.  Teddy loves it too.


You can make you own seasoning or buy it from William Sonoma.  Their's is excellent.

All you do is sprinkle some on the salmon.


Place the salmon on cedar planks which have been soaked in water for at least an hour.

Bake them at 400 degrees for about 20 minutes depending on the thickness of your fish.


I served it with sauteed garlic spinach and Israeli couscous.
