Chocolate Chip Pound Cake

If you are a fan of chocolate chip cookies, you will love this pound cake.  I had to hide it and dish it out in small portions or my guys would have wolfed it down in one sitting!
It really takes very little time to make.

Here is the recipe: 
Chocolate Chip Pound Cake
Prep Time: 20 minutes
Baking Time: 1 hour
Serves: 4-6

  • 1 3/4 cup flour
  • 1/4 tsp salt
  • 2 eggs
  • 2 egg yolks
  • 1 T. vanilla
  • 3/4 cup good butter, softened
  • 1 cup sugar
  • 1 cup mini chocolate chips or you can use regular.  I used 2 cups.
  1. Preheat oven to 325 degrees. Greased 9in loaf pan.
  2. In a bowl, whisk flour and salt.  Set aside.
  3. In a mixing bowl, beat butter and sugar until fluffy. Approx 5 minutes.
  4. Slowly, add in eggs, yolks and vanilla.  Beat until fluffy. About another 3 minutes.
  5. Add flour mixture in gradually.  Beat on low until combined.
  6. Fold in chocolate chips.
  7. Pour batter into prepared pan.  Bake 60 minutes or until knife inserted comes out clean. Make sure it is done in the middle.  It should take the whole cooking time to bake.
  8. Let cake cool for 20-30 minutes before removing from pan.
Use the whisk attachment of your mixer then switch to the paddle when adding the flour.

Press down on the batter to eliminate air pockets.

Remember to let the cake cool in the pan for almost 1/2 hour before removing it from the pan.  Continue to cool on a rack.
