A Vegetarian Sandwich

I made these for my kids the other day and they sure were good.                                                                                                  
 I browned some onion slices and some broccoli rabe in a bit of olive oil.

 And then I crisped some kale.  This adds lots of flavor to these sandwiches.

 I spread the buns with a little mayo and sprinkled it with Penzey's Sandwich Sprinkle. Then I layered cooked eggplant slices, oven roasted red pepper strips, thin slices of cheddar and havarti and some oven roasted tomatoes.

 Then the broccoli rabe and the kale.

 Some crunchy romaine and I spread the other side of the buns with basil pesto.


 A filling, healthy sandwich.
