We have a favorite Vietnamese place we frequent and this is a recreation of a dish we order often.
Start by measuring 1 cup of soy sauce into a bowl. Add 4 tablespoons of honey and 3 tablespoons of grated fresh ginger. Add a bunch of fresh cilantro diced up.
Mix in 3-4 grated garlic cloves, 4 tsp. of rice wine vinegar and 5 tablespoons of toasted sesame oil. I like a bit of a kick to it so I add some hot sauce too. Add the hot sauce of your choice. Whisk in 1/4 cup of peanut oil.
Throw a few cups of fresh spinach in a bowl and add 1 pound of spaghetti cooked until al dente. Shred a couple of carrots and add them to the bowl as well.
Add some green onions or 1 small onion sliced very thin.
Squeeze in the juice of 1 lime.
Toss it all together and serve it with a wedge of lime. This would be good sprinkled with sesame seeds and served topped with garlic prawns.
