The Blog Tech is a real cookie monster. I had not made cookies for a while and he started hinting that he needed some. So, I made him some of my mother's peanut butter cookies. I don't remember much about my mother since she died when I was very young, but I sure do remember her peanut butter cookies
I still have her recipe in her handwriting.
Mix 1/3 C, of peanut butter with 1/4 C. shortening and 1/4 C. butter. My mom used all shortening but I like to combine shortening and butter.
Mix in 1 C. sugar and 1/2 C. brown sugar.
Add 1 egg and 1 tsp. vanilla extract.
Gradually add 1 tsp. baking powder, 1/4 tsp. salt and 1 1/2 C. flour.
Form them into walnut sized balls.
Flatten them with a fork. Bake at 375 degrees for 10-12 minutes or just until they start to turn golden on the edges. Cool on racks.
