I saw this on someones blog and just had to try it. I need to make amends for the Shaker lemon pie fiasco. So, I give you: Lemon Shortbread bars. I think that shortbread is highly underrated in the United States. A good shortbread is one of my favorite treats.
Grease an 8x8 inch pan and line it with parchment.
Place 1 1/2 sticks of room temperature butter in the bowl of your mixer.
Add 3/4 cup of powdered sugar.. Sorry for the blurry pic!
Add 1 heaping tablespoon of grated lemon rind and 1 tsp. of lemon oil or lemon flavoring.
Add 1 cup of flour.
Add 1/2 cup of yellow cornmeal. Beat until combined.
Spread the batter in the pan as evenly as possible.
Sprinkle the top with coarse sugar.
Wet a sharp edged object and score the shortbread into bars.
I scored mine into 18 bars. Bake at 325 for approximately 45 minutes.
They should be set and golden.
Remove from the oven and score them immediately over the original score marks.
