Marshmallows and Halloween just seem to go together. I guess the fires burning outside at night are just crying out for marshmallows to be toasted in them. I never liked marshmallows much until I stated making my own. They are very easy to make and quite a lot of fun.
First you line a 9x12 inch pan with parchment paper. Then make sure to oil the paper or spray it with Pam.
Pour the corn syrup into the sugar in the pot and add 3/4 of a cup of water. Stir this mixture to blend.
Cook this over high heat until it reaches 238 degrees. Don't stir it. It should take about 9 minutes to reach this temperature.
While that mixture is cooking, pour 3/4 cup of water into the gelatine in your mixing bowl.
As soon as the sugar mixture reaches 238 degrees, remove it from the heat and drizzle it slowly into the gelatine with the mixer on low speed.
Gradually increase the speed on the mixer to high. This will need to beat for about 9 minutes.
Measure out 3 tsp. of vanilla. I also make my own vanilla. It is much cheaper than store bought and the quality is much better.
When the marshmallow begins to thicken, add the vanilla.
Continue to beat on high.
It will become very white and very thick.
Pour it into the oiled pan and smooth the top with an offset spatula. Let this sit for at least 3 hours.
After 3 hours the marshmallows are ready to be finished.
Sprinkle confectioners sugar over the top and spread additional confectioners sugar over waxed paper on your counter top.
Lift the marshmallow out of the pan by grabbing the ends of the parchment paper and flip the marshmallow over on top of the powdered sugar.
Sprinkle more powdered sugar over the entire block.
Make sure to cover all of the exposed surfaces.
Spray a sharp knife with Pam and cut strips of marshmallow from the block.
Roll each cube in additional confectioners sugar. If you think I am looking a bit messy here you would be right. I am totally covered with confectioners sugar! It's the only time in my life that I look angelic.
Continue until all the marshmallows are covered in confectioners sugar and then pack them away in an airtight container and go build a fire!!!!Halloween may now officially begin!
