Tuscan Sausage Pasta and Potato Soup

I made 50 quarts of this for the shelter the other day.  It was the first time I made it and it is really excellent soup.
Saute' diced carrots, celery and onions in a bit of olive oil.

Add some Italian sausage and break it into small bits as it browns.

Add some diced potatoes.  Add some diced garlic and S&P to taste.

I always add some Parmesan cheese rinds to soups like this for added flavor.  Remove them before serving the soup.

Add enough chicken stock to cover it all by a couple inches.  Taste it and add some bullion for added flavor.

Add some diced kale.

Add some pasta which has been boiled for about 5 minutes.  It will cook more when it is in the soup.

Add some whole milk and heat thoroughly before serving.  Cook until the potatoes are tender.

Taste it for flavor and adjust seasoning.
