Witches and Pasta

Following is a really simple but excellent pasta salad which is great for the holidays and has all the right colors.


Into the bowl of a food processor, dump a jar of sun-dried tomatoes (8oz.) along with the oil. I also add some fresh oven roasted tomatoes but you can use just the sun-dried tomatoes for good results. Add four cloves of garlic.


Then add 3 tablespoons of red wine vinegar.



Measure out 3/4 of a cup of olive oil.


A teaspoon of salt and some freshly ground pepper. Pulse all of this until blended and then slowly add the olive oil through the feed tube.


Mmmmmm......this makes a very good tomato paste. You could use this on so many other things. I use it like a pesto on sandwiches. It is very flavorful.


Take a pint of pitted Calamata olives...


...slice them in half.


Boil one box of spiral pasta until al dente. Drain it and rinse with cold water to stop it from cooking.




Chop up a bunch of basil and slice a pint of flavorful cherry tomatoes in half. Measure out a cup of fresh Parmesan. Mix all of these together and check for seasoning.


Sprinkle a bit more Parmesan on the top. I am not a huge fan of sun-dried tomatoes but this recipe is outstanding. It makes a very colorful dish for a holiday buffet.
