Southern Smothered Beans

I made these for New Years Day. If you have never had smothered green beans, you really should try these. This is some serious comfort food!

Fry a few strips of diced bacon sliced up until the begin to crisp but are still soft.

They should look like this.

Add 1 large diced onion to the bacon in the pot.

Add 4 large potatoes cut into large chunks.

Then add a couple pounds of fresh green beans with the ends snapped off and cut them in half.

Add several tablespoons of cracked black pepper and a teaspoon of salt. Taste later and add more seasoning if necessary. These should have a peppery flavor so make sure to use enough black pepper.

Add 4 cups of water.

Bring this to a boil then cover it and simmer until the potatoes are soft enough to mash. About 45 minutes.

Remove most of the potatoes to a separate bowl and mash them. They can be lumpy. Add the potatoes back to the pot. Taste for seasoning and adjust if necessary.

A big pot of yum!
