The Best Sandwich Bread

This is just really good bread. What else can I say? It makes 5 loaves and freezes beautifully.

Pour 3 cups of water into the bowl of your mixer.

Add 2 T. instant rise yeast.

Add 1 T. of salt. This seems like a lot but remember you are making 5 loaves.

Add 1/2 cup of sugar.

Add 1/2 cup of canola oil.

Add 4 cups of all-purpose flour.

Add 1/2 cup of vital wheat gluten.

Add 3-4 cups of whole wheat flour. Knead until you have a smooth dough that pulls away from the side of your mixing bowl.

Spread some melted butter in the bottom of a bowl and swirl it around to coat the bowl.

Place the ball of dough in the bowl and turn it over to coat with butter.

Cover with plastic wrap and set it in a warm place to rise.

It is a good idea to split the dough and place it in two bowls so it does not run over the edge when it rises. I place mine in my oven and set it on proof to rise.

Once the dough rises, split it into 5 equal pieces and place them in buttered bread pans. Let them rise until they are cresting the top of the pans.

Bake them at 375 degrees for 25-30 minutes until they are golden brown. You can brush the tops with butter if you want to. I wrap the extra loaves in foil and freeze them.
